Crispy Mushroom Garlic Noodles is an Indo Chinese recipe where mushroom is fried until golden brown and noodles are cooked al dante. Then tossed in spicy sauces. Indeed, the Indo-Chinese cuisine is one of the most liked cuisines in India and its popularity is increasing day by day.
The other day, when I had visited an Asian restaurant in Minneapolis, United states for a family dinner, we ordered crispy mushroom garlic noodles as a starter. The dish was too appetizing. This inspired me to recreate this dish at home and here is how to make crispy mushroom garlic noodles.
Cooking time: 30 minutes
Ingredients:
· 100g Mushroom (Use small mushrooms for the recipe)
· 4 tbsp Cornflour
· 2 tbsp Riceflour
· 1 tbsp Salt
· ½ tbsp Black pepper powder
· 2 tbsp oil
· Hakka noodles
· 5 Garlic Cloves finely chopped
· ½ tbsp Ginger finely chopped
· 1 tbsp Soya sauce
· 1 tbsp Chilli sauce
· 1 tbsp Vinegar
· ½ Capsicum finely chopped
· ½ Carrot finely chopped
· 1/2 cup cabbage finely chopped
· ½ cup scallions finely chopped
· Finely chopped coriander for garnishing
Instructions:
· Wash and cut the mushrooms and keep it for later use.
· Mix cornflour, rice flour, salt and black pepper powder in a bowl
· Add little water and mix to make a thick batter
· Dip the mushroom into the batter and leave for 5 minutes
· Heat oil in a pan
· When the oil is hot, add the mushrooms and fry until its golden brown. Keep it aside for later use
· Whisk together soy sauce, chilli sauce, vinegar and oil and set aside
· Add 1/2 tbsp salt in the water and boil water in the vessel
· After 5 minutes, add Hakka noodles in the water. Cook until al dante
· Heat oil in the Pan or Wok
· When the oil is hot, add finely chopped garlic, finely chopped ginger, finely chopped carrot and cabbage. Toss it for 2 -3 minutes on a high heat.
· Add the cooked noodles, crispy mushrooms, along with the whisked sauce and toss well on high heat
· Sprinkle with chopped green scallions, coriander leaves and serve hot.
